Description. The Yacon is an ancient Incan vegetable with large tubers with a sweet taste and are crunchy. This plant requires full sun with well drained soil. An extremely hardy perennial growing in hot or cold conditions however, the foliage will die back in time for harvest during winter and re-shoot in the spring. Grows to 1m high.
